Kim's Kitchen Cheesy Breakfast Casserole

It's Fun..It's Easy...It's Cheesy Breakfast Casserole! From Kim's Kitchen!

    What could be better than cheese and potatoes?

    This easy casserole lets you start your day with the great combination of hash browns, cheese and sausage
  •  
    And here they are!
  •  
    In a non-stick skillet, dice and saute one onion in a few tablespoons of olive oil.

    Add a diced green bell pepper.
  •  
  •  
    Add a diced tomato or a few diced sun-dried tomatoes and garlic.
  •  
    Saute until the vegetables are crisp tender.
  •  
  •  
    In a mixing bowl, whip the eggs till well blended.
  •  
    Add the milk and blend well.
  •  
  •  
    Add the cheese, vegetables, potatoes and cooked sausage to the egg mixture.
  •

    Salt and pepper to taste. Pour into a 13 x 9 inch greased casserole dish. Bake in a pre-heated (350 degree) oven for 40 minutes or until the eggs are firm.

    INGREDIENTS: 1 package of breakfast sausage ( I use turkey sausage crumbles) 3 cups of frozen diced hash brown potatoes 8 eggs 2 cups of shredded cheddar cheese 1 large onion 1 bell pepper 1 fresh tomato or sun dried tomatoes 4 cloves garlic 1 cup milk 2 tsp. salt dash pepper
