Kim's Kitchen Chili Cheese Cups

    I started making these yummy cups when my children were in grade school. They make a very quick week-night dinner. And, they’re very easy for little hands to hold!

    Most likely, you’ll already have many of the ingredients on hand. Cheese, green chiles, black olives, cream cheese, canned biscuits and cooked chicken or sausage.

    Gently flatten and stretch each biscuit and place inside a greased muffin pan.

    Work with each biscuit until the dough resembles a bowl.

    In a medium bowl, blend the cheddar cheese, cream cheese, green chiles and olives just till blended.

    Chop the sausage into small bite size pieces.
  •  
    Fold the sausage into the mixture and blend well. Spoon about 1/2 cup of the cheese mixture into each cup.

    Bake till the biscuits are golden brown and the filling is bubbly, about 20 – 25 minutes in a 375 degree oven.

    Cool for about 5 minutes then remove from the muffin tin and serve with a green salad.

    Ingredients: 1 can of biscuits. 3 oz. cream cheese, s.oftened. 1 cup left-over cooked chicken or Polk’s Sausage. 1 small can of sliced black olives, drained. 1 small can of diced green chile peppers (less for a milder flavor). 1 cup of shredded cheddar cheese. If desired, garnish with sour cream and salsa.
