Kim's Kitchen Fruit Pizza

    Don’t let the summer pass you by without making this super easy and delicious dessert.

    Full of strawberries, blueberries and kiwi...what's not to love!

    The best recipes start with the most simple ingredients. I like to gather and measure everything at once to make assembly easier.

    Cream together the butter and 3/4 cup of sugar till smooth. Mix in the egg and add the flour, cream of tartar, baking soda and salt just till blended. The dough should resemble cookie dough. Press/roll onto a large pie pan.

    Spread the dough until it's approx. 1/4 inch thick and covers most of the pizza pan.

    Bake at 350 degrees for 8 to 10 minutes and lightly browned. Set aside to cool.

    While the "pizza crust" is cooling, wash and slice the fresh fruit. I like to pat the fruit dry to keep the pizza from getting soggy. I used strawberries, blueberries and kiwi for this recipe. Any fresh fruit works.

    Peel the fuzzy fruit like you would peel a potato or carrot.

    Once sliced, the kiwi makes for a beautiful topping!

    Cream together sugar, vanilla, oj and cream cheese for the pizza "sauce" frosting.

    Spread the cream topping evenly onto the cooked crust.

    This is the fun part...topping time !!!! Be creative and arrange the desired fruit on top of the filling.
