Kim's Kitchen Italian Stuffed Bell Peppers

    This recipe is really tasty and simple, but it also looks "fancy" enough to share with dinner guests. It can be made ahead of time, so you can have more time to enjoy your company!

    Pre-heat oven to 400. Wash the bell peppers and slice in half...removing the seeds.

    Place open side up on a foil lined cookie sheet and bake for 20 minutes.

    In a skillet, brown 1/2 pound of ground turkey or ground hamburger. Add 1 can of diced tomatoes and 1 tablespoon of italian seasoning blend. Simmer while the peppers bake.

    Remove peppers from oven. Fill each pepper with approx. 2 tablespoons of tomato meat sauce.

    Next, spoon 1 -2 tablespoons of ricotta cheese on top of the meat sauce in each pepper cup. Pour an additional 1 tablespoon of meat sauce on top of the ricotta cheese.

    Top each pepper with the mozzarella cheese evenly divided among the peppers.
  •  
    Bake for 12 more minutes or until the cheese is melted and bubbly.

    Remove peppers from oven.

    Top each pepper with grated parmesan cheese and a sprinkle of Italian seasoning.

    Bake 5 additional minutes.

    INGREDIENTS: 4 Bell Peppers. 1 can of italian seasoned tomatoes (16oz). 1 Cup Ricotta Cheese. 1 Cup Mozzarella Cheese – Shredded or sliced. half cup Parmesan Cheese – Grated. 2 Tablespoons of Italian seasoning blend.
