Kim's Kitchen Lettuce Wraps

    These super easy wraps make a terrific light, summer dinner.
  •  
    Assemble all the ingredients and then chop the chicken into small bite size pieces.
  •  
    Saute the chicken with a couple of tablespoons of oil until light brown. I used coconut oil.

    Dice onion and add to the chicken.
  •  
    Saute the onion until translucent.
  •  
    Mince the garlic gloves and ginger and add to the chicken mixture.
  •

    Add a dash of black pepper and saute for 2 minutes.
  •  
    Add green onions, water chesnuts and hoisin sauce. Hoisin sauce can be found in the international food aisle.

    Stir gently to coat the chicken. The hoisin sauce will turn the chicken a light orange/gold color. Finally, add the soy sauce, red wine vinegar and sesame oil.

    Pat dry the lettuce leaves and arrange on a platter with the chicken mixture.
  •  
    Garnish with peanuts or cashews and fresh cilantro.
  •  
    Allow guests to assemble their own wraps. This is definitely a great finger food! Bon Appetit!
